The Fish Weight
The Fish Weight is a professional-grade stainless-steel tool designed to help you achieve exquisite, restaurant-quality crisp skin fish effortlessly. Created by chef Josh Niland, this elegant piece of cookware ensures your fillet stays flat, cooks evenly, and develops a perfectly crisp skin, all without needing to finish in the oven.
Details & Design
-
Material: Food-grade stainless steel
-
Weight: 1.6 kg – substantial and stable
-
Finish: Mirror-polished base looks beautiful hanging in your kitchen
-
Dimensions: 16cm diameter
- Notes: On the base of the weight there is a dimple where the handle has been welded on - this is normal.
How to use The Fish Weight
-
Preheat your pan with a thin layer of clarified butter (or oil of choice).
-
Once hot, place the fish skin-side down into the pan.
-
Position The Fish Weight directly on top of the fillet.
-
For larger fillets, centre the weight over the thickest part.
-
-
Allow the weight to gently press the fillet into the pan, keeping the skin in full contact with the hot surface.
-
Adjust the weight as needed during cooking to ensure even pressure and uniform cooking across the fillet.
-
Let the heat transfer through the skin and up through the fillet—gently and evenly.
-
No oven required: the fish will cook completely on the stovetop, developing a crisp, golden skin and a tender, perfectly cooked interior.
- Rest the fish skin side up on a warm plate. Season well with sea salt.

Let customers speak for us
from 128 reviewsWow! I'm absolutely gobsmacked at the result using the fishweight and pan purchased from Mr Niland. I was sceptical but I thought my husband was keen. We were so, so wrong... it turned out to be the most sublime fish dinner we've cooked at home. Truly splendid. Do yourself a favour and get one… you won't be disappointed!
Excellent product, easier to use than tweezers !
Excellent product
super useful tool, can be used for fish, chicken, meat. works very well, perfect weight. highly recommend
Perfect weight for pressing fish down. Also great for other protein.
I originally bought the rainbow weight as a Christmas gift for my friend who is a Chef. She said it was the best gift ever and uses it frequently. When it came back on sale a couple of months ago I decided to get it for myself. I absolutely love it!!! So far I've used it when the Striper was in season and for duck breast. What a succulent sear on the skin. Love that crunchy goodness.
Thank you!!
I love the fish weight. I use it every time I pan sear fillets. I've also butterflied a whole branzino and pan seared it skin-side down. It always results in perfectly cooked, very moist flesh and crispy skin. I can't wait to use it again tonight.
Fantastic. Great for fish and steak . Doesn't over heat .
Excellent Product And Customer Service, great value for money.
Good logic explained for non- scientific people!!
I love the Fish Weights, all the accessories were nice too, I will buy the fish pans soon too. I love the fact Wylie Dufresne is coming to at SP, one of my best meals of my life was at WD-50.

Excellent Book nice recipes
New addition to our kitchen and still getting used to it. It’s done Whiting, Flathead fillets, toasted sangas and hamburgers so far. Also crushed garlic and bruised beans and smashed spuds. Damn fine tool.
This is excellent. I use it for cooking fish, burgers, steaks. Easy to use, and easy to clean in the dishwasher. Helps achieve nice crispy fish skin and evenly cooked fish and also meat.
After just a few uses of the fish weight, I haven't mastered the art of crisp skin yet but I do very much like the way that it cooks the fish. It gives you excellent control and produces beautifully cooked, soft, moist flesh that really allows the flavour to come through. Josh's great tip of finishing off the surface of the fish by spooning some of the cooking oil over it rather than flipping it over also makes a real difference.
