1. Pan-Roasted Chicken Breast. Place the raw chicken breast in between baking paper and use the fish weight to flatten to an even thickness. Use the Fish Weight to apply pressure when pan frying the chicken to achieve a golden brown crust and assist with cooking through. Top Tips - use plenty of oil in the pan and once you achieve a lovely golden crust on one side of the chicken only cook the other side lightly - otherwise the result will be overcooked.
  2. Crispy Mushroom Rice. Carla use the fish weight to apply pressure to mushrooms when pan frying them - achieving a crispy golden result that she then adds cooked rice to. The fish weight goes on top again to create a crispy golden base of mushroom rice on the bottom of the pan similar to paella.
  3. Butter Basted Pork Chop. Carla uses the fish weight to apply heavy and even pressure to her pork chop as she pan fries it. She achieves a golden crust and no oven time is required thanks to the recirculation of heat.
  4. Garlic & Rosemary Smashing. Carla uses the fish weight to smash her garlic (makes peeling very easy once smashed!) and her Rosemary (release the flavour) before adding the garlic & rosemary to the pan with her pork.
  5. Salt & Vinegar Smashed Potatoes. Carla cooks her potatoes in salted water until tender. While they are still hot she then uses the Fish Weight to smash each one so they flatten and some of the insides come out. She coats them with oil (top and bottom) and seasons with salt and pepper before placing them in the oven. In the oven they become beautifully crisp and crunchy! She then sprinkles them lightly with black vinegar and coins them the gold standard of crispy potatoes!
  6. Loaded Smashburger. Carla cuts, butters and then pan toasts her burger bun with the fish weight on top to stop the bun going soggy. The fish weight is also used to flatten the meat patty to a thin round and to apply pressure while it cooks in the pan.

  8. Smashed Ginger. Carla uses the fish weight to smash her peeled ginger before running a knife through it for her veggie stirfry.
  9. Green Beans. Carla uses the Fish Weight to smash her green beans for her stirfry. By smashing the beans they cook faster and can absorb all the flavours of the stirfry.
  10. Crisp Tofu. Carla uses the Fish Weight to remove the excess moisture from her firm tofu before pan frying it into crisp golden cubes. She wraps the tofu in a cloth, places the fish weight on top for 10 minutes and then drains off the liquid. The tofu cubes are tossed in cornstarch and pan fried until golden.
  11. Sohla's Broccoli & Cheese Taco. Chop your raw broccoli roughly and then cook on a flat griddle or pan with oil & salt. Use the fish weight to apply pressure while cooking. Gather the broccoli into a round area, top with cheese and a tortilla. Place the fish weight on top and cook until the broccoli and cheese have formed a dark golden crust on the underside. Flip onto a plate and serve.
