I haven’t had a chance to cook with it yet, but aesthetically it is a stunning edition and certainly appears to rise to the top of the fish cookery on the market. First rate!

I have been following Josh with great enthusiasm ever since he opened Saint Peter in 2016. I have spent 40 years in the seafood industry, and what impressed me from the start is how he works with his producers, his clear view on how fish should be caught and handled, his dry-ageing, and the uncompromising way he puts scale-to-tail into practice. The Fish Butchery in particular inspired me and has set a benchmark for my own seafood business.

I already own The Whole Fish Cookbook and Fish Butchery, and this hand-signed copy of Chapter & Verse surpasses everything I knew from him – in scope, in the wonderful stories behind ten years of Saint Peter, and of course in the recipes. The essays take you right inside the restaurant, and with well over 100 recipes woven through them there is more to cook and learn here than in either of the earlier books. Having it signed by Josh makes it something special. A must for anyone who is serious about fish.
